Food at Uncle Pasha's dacha

My favourite deadly sin is gluttony, with emphasis both on quantity and taste. Guests are welcomed and encouraged to partake in the pleasure of palate and stomach. Here are some representative examples and notes to show you how we work on increasing the sum total of happiness by preparing and serving what we deem to be good food.

Water for cooking purposes comes from the spring nearby.
Start the day with a cup of properly made coffee. We don't recognize the legitimacy of coffee machines, filters, and other space-age methods of spoiling the product.
On request powerful, but legal (sigh) stimulants can be added to enhance the effect without worsening the taste.
The result
Typical "breakfast" food here is cous-cous. Here it is shown served with eggplant rogue and marinated ginger.

Guess my chicken, by virtue of being allowed, or unsuccessfully not allowed to be anywhere they please, need to be called "free range". They mostly feed by picking through horse manure. That, I guess, makes them "organic". They usually meet their end in the form of foxes or falcons.

Thick lentil and tomato soup.
I like serving something crunchy with soup. These a urid flour chips.
Another type of urid flour patties.
Chick pea flour patties.
The extra-fattening version of chick pea flour patties with lots of hot pepper and spices. These will most definitely require beer.
Fried vegetables, ride, wild rice.
Small onions briefly fried in real hot corn oil, okra, and lentil patties.
Pickled mushrooms and vegetables bought from my neighbour Aunt Valya.

As much as practicable I buy supplied from my subsistence farmer neighbours who have no money for fertilizers, herbicides, or pesticides. Guess that makes their food "uncertified organic".

Zucchini and broccoli that grew on the old pile of horse manure, and mushrooms from the woods. 

Also organic. I'll see if I can make this page show in responce to organic+farming+Russia.

I'm also an unashamed snob when it comes to spices and seasonings. When I have a choice I get the fresh and whole.

Only properly brewed soy sauce.

Only sea salt.

Potatoes can be bakes in the fireplace. A popular way to end a day here.
Strong ginger tea before going to bed.

Vegetarian equipment for horses. Real purists will soon be able to enjoy horse riding without having to sit on the saddle made of dead animals. We are working on creating a complete set of comfortable leather-free tack.

While I strongly dislike these, I will have to mention  "organic", "health food", "free-range eggs", and "organic farming" several times on this page. If the project is to continue the page has to show up, and you show up by giving what people want. Sorry.
